Apple Cinnamon Raisin Muffins
Ingredients:
wheat flour, white, all-purpose, unenriched
leavening agents, baking powder, double-acting, sodium aluminum sulfate
salt, table
spices, cinnamon, ground
sugars, granulated
egg substitute, powder
oil, corn, peanut, and olive
milk, fluid, 1% fat, without added vitamin a and vitamin d
applesauce, canned, unsweetened, without added ascorbic acid (includes usda commodity)
raisins, seeded
Directions:
Mix dry ingredients in mixing bowl.
Beat egg substitute and whip in oil, milk, and applesauce.
Add to dry ingredients and mix until flour is just moistened.
Stir in raisins.
Fill muffin tins 2/3 full.
Bake for 25 minutes at 400 degrees.
Remove muffins from tins immediately.
Makes 12 servings.
