Pina Colada Sorbet

Ingredients:
milk, fluid, 1% fat, without added vitamin a and vitamin d
sugars, granulated
alcoholic beverage, distilled, rum, 80 proof
salt, table
pineapple, raw, all varieties
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)

Directions:
Add coconut milk, sugar, rum and salt to a small saucepan.
Warm over medium heat until sugar is dissolved.
Transfer coconut mixture and pineapple to a blender and pulse until smooth.
Add coconut extract.
Strain through a sieve and chill 4 hours or up to overnight.
Freeze using ice cream machine according to manufacturers instructions.
Let set completely in freezer.
Serve with whipped cream or desired toppings.
Makes about 1 quart.
