Vanilla-Cranberry Scones
Ingredients:
cereals, oats, regular and quick, unenriched, cooked with water (includes boiling and microwaving), without salt
milk, buttermilk, fluid, cultured, lowfat
wheat flour, white, all-purpose, unenriched
sugars, brown
leavening agents, baking powder, double-acting, sodium aluminum sulfate
leavening agents, baking soda
butter, without salt
cranberries, dried, sweetened
sugars, granulated
Directions:
Preheat oven to 425 degrees F. Combine cereal and buttermilk; let stand 5 min.
Meanwhile, mix flour, brown sugar, baking powder and baking soda in large bowl.
Cut in butter with pastry blender or two knives until mixture resembles coarse crumbs.
Stir in cereal mixture and cranberries just until mixture forms soft dough.
Place dough on lightly floured surface; knead until smooth.
Roll out to 12x4-inch rectangle.
Cut into three 4-inch squares, then cut each square into four triangles.
Place in single layer on baking sheet.
Sprinkle with granulated sugar.
Bake 12 min.
or until golden brown.
Serve warm.
