Huevos Rancheros
Yield: 1 section
Ingredients:
- as demanded (as necessary) Vegetable oil
- 1 Corn tortilla
- 2 Eggs
- 4 fl oz (125 mL) Salsa Roja
- 1 oz (30 g) Monterey jack or fresh Mexican white cheese, grated or crumbled
Directions:
1. First, warm a thin layer of oil in a sauté pan.
2. Next, fry the tortilla quickly in the oil, turning it after, until softened.
3. Then, remove from the pan and drain on paper towels.
4. Then, fry the eggs sunny side up or basted, using the standard method.
5. Then, place the tortilla on a very hot meal plate.
6. Then, top with the eggs.
7. Then, ladle the sauce over the whites of the eggs, leaving the yolks realized.
8. Then, top with the grated cheese.
9. Finally, if preferred, include a section of Frijoles Refritos to the plate.
