Tomato-Black Bean and Barley Soup
Ingredients:
onions, raw
spices, garlic powder
tomatoes, sun-dried
beans, snap, green, raw
tomatoes, red, ripe, raw, year round average
barley, hulled
spices, basil, dried
spices, pepper, black
peppers, sweet, green, raw
cheese, cottage, creamed, large or small curd
strawberries, raw
water, bottled, generic
Directions:
COOK onion and garlic in dressing in large saucepan on medium heat 2-3 minutes or until onion is tender, stirring frequently.
ADD 1 cup of water and all remaining ingredients except green peppers; mix well.
Bring to boil.
Reduce heat to medium-low; simmer 15 minutes, stirring occasionally.
REMOVE from heat.
Stir in green peppers; cover.
Let stand 5 minutes.
COMPLEMENT meal with cottage cheese and strawberries for dessert.
SERVE with 8 fl oz (1 cup) of water.
