Red Lentil Balls

Ingredients:
salt, table
water, bottled, generic
lentils, raw
bulgur, dry
oil, olive, salad or cooking
onions, raw
spices, garlic powder
spices, coriander seed
spices, cumin seed
tomatoes, red, ripe, raw, year round average
parsley, fresh
onions, spring or scallions (includes tops and bulb), raw
spices, pepper, black

Directions:
Add 1/2 teaspoon salt to the water and bring to a boil.
Add lentils, lower heat to a simmer and cook until soft.
Once the lentils are cooked, remove from the heat and stir in the bulgur.
Cover and set aside for at least 1520 minutes.
In a skillet, heat olive oil over medium high heat.
Add onion, garlic, coriander, and cumin.
Cook on medium-low heat until onions are soft.
Add tomato paste to the onion mixture and mix well.
Stir onion mixture into the lentil mixture.
Add parsley, green onions, and pepper.
Taste before adding the remaining 1/2 teaspoon of salt.
Allow mixture to chill before shaping into balls.
Serve chilled.
