Chicken Tomato Bouillon with Pesto
Yield: 6 qt (6 L)
Ingredients:
- 6 qt (6 L) Chicken stock
- 2 qt (2 L) Tomato juice
- 8 oz (250 g) Celery, chopped
- 8 oz (250 g) Onion, chopped
- 11�"2 tsp (7 mL) Dried basil
- 1�"2 tsp (2 mL) Dried thyme
- to taste Salt
- to taste Pepper pinch pinch Sugar
- 12 fl oz (375 mL) Pesto thinned with olive oil
Directions:
1. First, place the stock, juice, celery, onion, basil, and thyme in a saucepot. Deliver to a boil.
2. Next, simmer about 45 minutes, until veggies are tender and flavors are very well mixed.
3. Then, pressure and time with salt, pepper, and a pinch of sugar.
4. Finally, garnish just about every element with 1 tbsp (15 mL) pesto flippantly swirled into the soup.
