Chickpea Salad With Tahini Dressing

Ingredients:
chickpeas (garbanzo beans, bengal gram), mature seeds, raw
peppers, sweet, green, raw
carrots, raw
celery, raw
onions, spring or scallions (includes tops and bulb), raw
cheese, ricotta, whole milk
water, bottled, generic
seeds, sesame butter, tahini, from roasted and toasted kernels (most common type)
salad dressing, mayonnaise, regular
lemon juice, raw
oil, olive, salad or cooking
soy sauce made from soy (tamari)
spices, garlic powder
spices, cumin seed
spices, coriander seed

Directions:
Salad: In a bowl, combine all salad ingredients.
Dressing: In a food processor, process all dressing ingredients, except cilantro, until smooth.
Combine with salad and cilantro; toss to coat.
To cook dried chickpeas: Cover 2 cups chick-peas in water and bring them to a boil for 3 minutes.
Leave covered for 1 hour, drain water, cover with fresh water and simmer for 20 - 30 minutes or until tender.
