Corn Muffins
Ingredients:
cornmeal, degermed, unenriched, yellow
wheat flour, white, all-purpose, unenriched
sugars, granulated
leavening agents, baking powder, double-acting, sodium aluminum sulfate
salt, table
milk, fluid, 1% fat, without added vitamin a and vitamin d
butter, without salt
onions, spring or scallions (includes tops and bulb), raw
Directions:
Preheat oven to 425 degrees F.
Grease a 12-cup muffin tin.
In a big mixing bowl, combine dry ingredients.
In another bowl, combine milk with butter.
Add milk and butter mix to the cornmeal mixture, whisking gently until just combined.
Toss in green onions.
Spoon batter into muffin cups and bake for 20-30 minutes, until golden brown.
