Sweet and Sour Beef-Cabbage Soup
Ingredients:
1 tbsp canola oil, 1 lb lean ground beef, 1 1/2 tsp caraway seeds, 1 tsp dried thyme, 2 1/2 cups thawed chopped peppers and onions, 1 diced golden apple, 6 cups low-sodium beef broth, 1 can diced tomatoes, 1 1/2 tbsp honey, 1 tbsp paprika, 3 cups chopped savoy cabbage, 1-2 tbsp cider vinegar, salt and pepper to taste.
Directions:
In a Dutch oven, brown the beef with thyme and caraway seeds in oil for 4 minutes. Add the pepper, onion blend, and apple; cook for a few more minutes. Stir in broth, tomatoes, honey, and paprika. Simmer for 10 minutes. Add cabbage and cook until tender. Finish by stirring in cider vinegar and seasoning with salt and pepper.
