Ingredients:
1 1/2 cups sifted unbleached flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup sugar
3/4 cup cooking oil
2 large eggs
1 1/2 cups pared, shredded carrots
1/2 cup chopped walnuts
Directions:
Sift the flour, baking soda, cinnamon, nutmeg, and salt together in a small bowl and set aside. Combine the sugar, oil, and eggs in a mixing bowl. Beat with an electric mixer set on medium speed for 2 minutes. Add the dry ingredients, stirring just until moistened. Stir in the carrots and walnuts. Pour the batter into a greased 9x5x3-inch loaf pan and bake in a preheated 350
