Greek Lemon-Roasted Potatoes

Ingredients:
potatoes, raw, skin
water, bottled, generic
oil, olive, salad or cooking
lemon juice, raw
spices, oregano, dried
salt, table
spices, pepper, black

Directions:
1.
Preheat oven to 425 degrees.
2.
Chop potatoes into chunks.
You can either peel them or leave the skin on.
3.
Place potatoes and remaining ingredients into a large baking dish.
(You may need two!)
4.
Bake uncovered for about 50 minutes until tender and brown on the edges.
Turn the potatoes halfway through the baking time.
At this time, you can add more water if it has all been absorbed.
5.If you like them nice and crisp you can turn on the broiler for a few minutes.
