Herbed Rice Pilaf

Ingredients:
butter, without salt
onions, spring or scallions (includes tops and bulb), raw
parsley, fresh
rice, white, long-grain, regular, unenriched, cooked without salt
soup, vegetable broth, ready to serve
spices, pepper, black

Directions:
In a medium saucepan, melt butter.
Add scallions and herbs and cook, stirring, for 1 minutes.
Add rice, stir to coat grains and then add broth.
Bring to a boil over high heat, cover, remove from heat and let stand until liquid is absorbed and rice is tender, 5 minutes.
Season with salt and pepper to taste.
Fluff with a fork before serving.
