Colada Cookies
Ingredients:
applesauce, canned, unsweetened, without added ascorbic acid (includes usda commodity)
sugars, granulated
orange juice, raw
seeds, flaxseed
water, bottled, generic
carrots, raw
wheat flour, white, all-purpose, unenriched
leavening agents, baking powder, double-acting, sodium aluminum sulfate
spices, cinnamon, ground
salt, table
Directions:
Grind the flax seed in a blender, food processor or coffee grinder.
Mix it with the water and let sit while you grate the orange peel.
Add the orange peel.
Combine the applesauce and the sugar.
Add to the flax/orange mixture.
Combine the flour, sugar, baking powder, salt, cinnamon and coconut in a medium sized bowl.
Add the carrot and stir.
Pour the flax/orange/applesauce/sugar mixture into the dry ingredients and stir until just combined.
Don't over stir.
Drop by tablespoons onto greased baking sheet.
Bake at 375 for 13 minutes or so.
