Carrot Day Loaf

Ingredients:
2.5-3 cups whole wheat flour, 1 package yeast, 2 tbsp honey, 1/2 tsp allspice, 3/4 cup hot water, 1 cup grated carrots, 1/2 cup chopped pitted dates

Directions:
Mix 1 cup flour, yeast, honey, and allspice in a large bowl. Add water and beat for 2 minutes at medium speed, scraping bowl often. Beat for 2 more minutes at high speed. Stir in carrots, dates, and enough remaining flour to form a tender dough. Knead on a floured surface for 4-5 minutes. Place in an oiled bowl, turning once. Cover and let rise until doubled, about 1 hour. Punch down, roll to 7x12 inches, and roll up tightly from the short end. Pinch seams and ends. Place seam-side down in an oiled loaf pan. Cover, let rise until doubled (about 1 hour). Bake at 375
