Loaded Peppers
Ingredients:
4 bell peppers, 2 cups cooked brown or basmati rice, 1 can black beans (drained), 1 minced onion, 3 ears of corn (kernels cut off), 1 can tomatoes with chilies, 1 tsp cumin, 1 tsp chili powder, 1/2 tsp oregano, 1.5 cups tomato sauce
Directions:
Remove tops and seeds from peppers to make bowl shapes. Steam until slightly soft and set aside. Combine all remaining ingredients (through tomato sauce). Fill peppers with the rice mixture and place in an oiled casserole dish. Pour tomato sauce over the top. Bake at 350
