Old-Fashioned Waldorf Salad

Ingredients:
5 cups chopped unpeeled organic apples, 2.5 cups chopped celery, 1.25 cups chopped pecans, walnuts, or cashews, 1/2 cup Soy Mayonnaise, lettuce leaves, apple wedges, pecan halves

Directions:
Combine the first four ingredients and toss gently to coat. Chill for 1-2 hours. Serve in a lettuce-lined bowl and garnish with apple wedges and pecan halves. Makes 10 servings.
