Bourbon Mashed Sweet Potatoes Recipe

Ingredients:
sweet potato, raw, unprepared
oil, olive, salad or cooking
cream, fluid, heavy whipping
alcoholic beverage, distilled, whiskey, 86 proof
sugars, brown
molasses
salt, table

Directions:
Preheat the oven to 425 degrees.
Lightly rub the sweet potatoes with the extra virgin olive oil.
Place on a foil-lined baking sheet and bake till tender, about 45 min to 1 hour, depending upon their size.
Remove from the oven and let sit till cold sufficient to handle.
Peel the sweet potatoes and transfer the flesh to a large bowl.
Add in the cream, bourbon, brown sugar, molasses, and salt, and beat on high speed with a hand-held mixer till smooth.
Cover to keep hot till ready to serve.
This recipe yields 4 servings.
