Old-Fashioned Waldorf Salad
Ingredients:
5 cups chopped unpeeled organic apples, 2.5 cups chopped celery, 1.25 cups chopped nuts (pecans, walnuts, or cashews), 1/2 cup soy mayonnaise, lettuce leaves, apple wedges, pecan halves
Directions:
Toss the apples, celery, nuts, and soy mayo together. Chill for 1-2 hours. Serve in a bowl lined with lettuce and garnish with extra apple and pecans.
