Brown Sugar Shortbread
Ingredients:
butter, without salt
sugars, brown
wheat flour, white, all-purpose, unenriched
dulce de leche
Directions:
In a mixing bowl, cream butter and sugar together.
Gradually stir in flour.
Turn the dough onto a lightly floured surface and knead until smooth, about 3 minutes.
Pat it to 1/3 inch thickness and cut into strips or into rounds using a small round biscuit cutter.
Place the cookies 1 inch apart on a parchment paper lined (or ungreased) baking sheet.
Prick each cookie a couple of times with a fork.
Bake at 300 degrees F for 25 minutes.
Cool for 5 minutes on baking sheet and the remove to a wire rack to cool.
Serve plain or create sandwiches by spreading about a teaspoon of dulce de leche onto the bottom side of a cookie and topping with another cookie.
Repeat with remaining cookies and dulce de leche.
