Peach Shortcake Muffins
Ingredients:
wheat flour, white, all-purpose, unenriched
sugars, granulated
leavening agents, baking powder, double-acting, sodium aluminum sulfate
salt, table
spices, ginger, ground
margarine, regular, 80% fat, composite, stick, without salt
milk, fluid, 1% fat, without added vitamin a and vitamin d
peaches, yellow, raw
sugars, granulated
spices, cinnamon, ground
Directions:
Combine first five ingredients in large bowl.
Cut in margarine with pastry blender until mixture is crumbly.
Add milk and peaches, stirring just until blended.
Spoon into greased muffin cups (paper liners do not work very well with this recipe).
Sprinkle with topping mixture.
Bake at 400F for 20-25 minutes or until set and golden.
