Chocolate Dulce de Leche Cupcakes
Ingredients:
butter, without salt
wheat flour, white, all-purpose, unenriched
leavening agents, baking powder, double-acting, sodium aluminum sulfate
cocoa, dry powder, unsweetened
sugars, granulated
salt, table
seeds, chia seeds, dried
water, bottled, generic
beverages, almond milk, unsweetened, shelf stable
butter, without salt
sugars, powdered
dulce de leche
milk, fluid, 1% fat, without added vitamin a and vitamin d
Directions:
For the cupcakes :
Preheat the oven to 375 F. Put 6 paper liners into a cupcake pan.
Set aside.
Into your mixing bowl add the butter, flour, baking powder, cocoa, sugar and salt.
Mix with the paddle attachment until the mixture resembles fine breadcrumbs.
In a small bowl mix the chia seeds with the water and let it sit for a few minutes.
Shortly, it will become a gel.
Add the gel to the dry ingredients and mix.
Slowly add the milk.
Spoon the batter into the prepared baking cups.
Bake for about 18-20 minutes.
Remove from the oven and set aside to cool.
Dulce de Leche Frosting
Put the butter, sugar and dulce de leche into a mixing bowl.
With the paddle attachment, mix them on low speed until incorporated.
Increase the speed and mix for further 2-3 minutes.
Add few drops of milk if needed until you reach your desired frosting consistency.
Frost the cupcakes when completely cooled!
