Ms. Fitts Oatmeal Bread (or Rolls)

Ingredients:
oats
oil, olive, salad or cooking
sugars, brown
salt, table
water, bottled, generic
leavening agents, yeast, baker's, active dry
water, bottled, generic
wheat flours, bread, unenriched
oil, olive, salad or cooking

Directions:
Put oats, oil, sugar, and salt into a heatproof mixing bowl.
Pour boiling water over the top, mix to combine.
Set aside and let it cool.
Dissolve yeast in the warm water, then add it to the cooled oat mixture with 6 cups flour.
Mix for 2 minutes, then add in rest of flour* one cup at a time.
Knead for 6-8 minutes until smooth and elastic.
Dough should be soft and not too stiff.
Place dough into an oiled bowl and let rise until double.
Prepare pans** by greasing them with oil or baking spray.
Punch down the dough, shape into loaves or dinner rolls and place in prepared pans.
Cover and let rise until double.
Bake rolls at 375 degrees F for 15-20 minutes.
Bake bread at 350 degrees F for 30-40 minutes.
(* This recipe can be made using half white and half whole wheat flour without any problems.
Any more than 50/50 and you will need to use a dough enhancer or add an additional rising between the first and the shaping.)
** Makes 4 loaves or 3 1/2 dozen large rolls.
(This dough holds up great in the freezer, too!)
