Apricot Bars

Ingredients:
wheat flour, white, all-purpose, unenriched
sugars, granulated
leavening agents, baking soda
salt, table
butter, without salt
nuts, pecans
apricots, dried, sulfured, uncooked

Directions:
In a medium mixing bowl, combine flour, sugar, baking soda, and salt.
Mix well and then stir in butter with a fork and continue mixing until mixture is crumbly.
Mix in pecans and stir well.
Press 1/2 of the mixture into a 13x9 inch baking pan.
Make sure to press firmly and make an even layer.
Bake at 350 degrees F for 15 minutes.
Spread the preserves over the crust to make a nice even layer and top with the remaining crust.
Return to oven to bake for 30 minutes.
Cool on a wire rack and then cut into bars.
