Apricot and Coconut Balls
Ingredients:
cereals, oats, regular and quick, unenriched, cooked with water (includes boiling and microwaving), without salt
water, bottled, generic
apricots, dried, sulfured, uncooked
milk, canned, condensed, sweetened
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
Directions:
Place bran cereal in bowl, pour over hot water.
Set aside for 5 minutes then place in food processor.
Add apricots and sweetened condensed milk.
Process till well combined - about a minute.
Mixture should be reasonably firm.
Roll into balls, roll in coconut.
Refrigerate balls for 2 hours in fridge.
