Baked Quinoa & Cheese
Ingredients:
quinoa, uncooked
water, bottled, generic
salt, table
cheese, cheddar
milk, fluid, 1% fat, without added vitamin a and vitamin d
butter, without salt
delallo, italian seasoned breadcrumbs,
Directions:
Preheat oven to 350 F.
Place the quinoa in a mesh strainer and rinse with cold water for about 2 minutes.
Place the quinoa, water and salt in a small saucepan and bring to a boil.
Cover with a lid, reduce the heat, and simmer until cooked, about 20 to 25 minutes.
Remove from heat and allow to cool just a bit.
In a large bowl, combine cooked quinoa, cheese, evaporated milk and butter spread.
Pour into a 2-quart casserole dish and sprinkle breadcrumbs on top.
Bake for 20 to 25 minutes, until cheese is bubbly and breadcrumbs have turned a golden brown.
Serve warm.
