Cinnamon and Raisin Granola Cookies
Ingredients:
applesauce, canned, unsweetened, without added ascorbic acid (includes usda commodity)
syrups, sugar free
vanilla extract
oats
oats
spices, cinnamon, ground
leavening agents, baking soda
leavening agents, baking powder, double-acting, sodium aluminum sulfate
salt, table
raisins, seeded
Directions:
Preheat oven to 350 degrees F. Line baking sheet with parchment paper or Silpat; set aside.
In a large bowl add applesauce, maple syrup and vanilla extract.
Mix until combined.
Add oat flour, oats, cinnamon, baking soda, baking powder and salt; mix until combined.
Fold in raisins.
Take a heaping tablespoonful of batter (I used a large cookie scoop) and place on cookie sheet, about 1 1/2 apart.
The cookies do not spread.
I carefully flattened the top of the cookies with a back of a spoon, but it is not necessary.
Bake for 10-12 minutes or until bottom is lightly golden.
