Directions:
Mix together the yogurt, sugar, and vanilla (if using).
Stir until the sugar is completely dissolved.
Refrigerate 1 hour.
Process in your ice cream maker according to the manufacturer's instructions, then freeze in an airtight container for up to 3 hours to firm up.
If you cannot get Greek yogurt, which is much thicker than regular yogurt, you can strain plain yogurt as a substitution.

To make 1 cup of strained yogurt, line a mesh strainer with a few layers of cheese cloth.
then scrape 16 ounces or 2 cups of plain whole-milk yogurt into the cheesecloth.
