High Fiber Low Fat Muffins
Ingredients:
cereals, oats, regular and quick, unenriched, cooked with water (includes boiling and microwaving), without salt
water, bottled, generic
leavening agents, baking powder, double-acting, sodium aluminum sulfate
orange juice, raw
Directions:
Soak cereal in the water for 5 minutes.
Add the baking powder and muffin mix and stir well to blend.
Mixture will be thick.
Spoon into muffin pans sprayed with nonstick spray.
Bake according to package directions, adding about 2 minutes to baking time.
