Pineapple Cupcake Glaze
Ingredients:
butter, without salt
sugars, powdered
pineapple, raw, all varieties
pineapple juice, canned or bottled, unsweetened, without added ascorbic acid
Directions:
Cream softened butter with an electric mixer, gradually adding powdered sugar to the bowl and creaming together well.
Stir in crushed pineapple and juice and blend thoroughly.
Mixture will resemble a glaze that may be easily brushed onto individual cupcakes or a large cake; I make mine from a box of pineapple cake mix.
Sprinkle extra powdered sugar on top to add a decorative garnish, if desired.
Tops approximately 20 cupcakes.
