Fresh Ginger Blueberry Energy Muffins
Ingredients:
egg substitute, powder
yogurt, vanilla, non-fat
orange juice, raw
oil, canola
spices, ginger, ground
cereals, oats, regular and quick, unenriched, cooked with water (includes boiling and microwaving), without salt
wheat flour, white, all-purpose, unenriched
sugars, granulated
leavening agents, baking soda
leavening agents, baking powder, double-acting, sodium aluminum sulfate
salt, table
blueberries, raw
nuts, almonds
Directions:
Heat oven to 400F Line 12 muffin cups with paper cup liners; set aside.
Stir together the Bettern Eggs, yogurt, orange juice, canola oil and fresh ginger.
Stir in wheat bran cereal; let stand 5 minutes.
Add whole wheat flour, sugar, baking soda, baking powder and salt.
Stir just until moist.
Gently stir in frozen blueberries and almonds.
Spoon batter equally into muffin cups.
Bake for 15 to 18 minutes or until toothpick inserted in center of muffin comes out clean.
