Wild Rice and Mushroom Casserole
Ingredients:
butter, without salt
wild rice, raw
rice, white, long-grain, regular, unenriched, cooked without salt
onions, raw
mushrooms, white, raw
nuts, pine nuts, dried
soup, vegetable broth, ready to serve
Directions:
Preheat oven to 325 degrees (175 C.).
In a large ovenproof skillet, melt the butter.
Saute the rices, onion, mushrooms and pine nuts over medium heat until the onion and mushrooms are soft.
Pour the broth over the rice mixture and cover tightly.
Bake 1 1/2 hours or until rice is tender.
