Cream of Peanut Soup
Ingredients:
butter, without salt
peanut butter, smooth style, without salt
onions, raw
wheat flour, white, all-purpose, unenriched
milk, fluid, 1% fat, without added vitamin a and vitamin d
soup, chicken broth or bouillon, dry
milk, fluid, 1% fat, without added vitamin a and vitamin d
Directions:
Cook onions in butter and peanut butter for 5 minutes.
Dissolve flour in 1 T milk.
Add to pan and stir until smooth.
Add scalded milk and chicken stock.
Season to taste.
Cook in double-boiler for 20 minutes.
Optional: top with chopped peanuts.
