Spinach and Semi Mashed Potatoes

Ingredients:
spinach, raw
potatoes, raw, skin
cream, fluid, heavy whipping
soup, chicken broth or bouillon, dry
spices, garlic powder
shallots, raw
salt, table
spices, pepper, black
parsley, fresh
spices, pepper, red or cayenne
spices, garlic powder
cheese, parmesan, hard

Directions:
In a large sauce pan and 1 teaspoon of butter add the garlic and onion and cook 1 minute, just to get the raw flavor out and start cooking the onion.
Add the chicken broth, cream and potatoes bring to medium heat.
Cook 10-12 minutes until soft but not too soft.
You want a little texture to them.
When you mash them with a fork you don't want them completely fall apart.
Then go ahead mash them up.
Last step -- add the spinach.
Cover and cook on medium until the spinach is wilted.
Just until wilted.
3-4 minutes if that.
Season with salt and pepper and a dash of nutmeg.
I like to add a teaspoon of fresh parsley and a dash of red pepper flakes.
Add the rest of the butter and If it is too thin, just add some more chicken broth or for a more creamy texture you can add so more cream.
Don't be afraid to add more broth or more cream if you want.
There is no right or wrong.
