Zucchini Casserole W/ Oat Bran

Ingredients:
squash, summer, zucchini, includes skin, raw
oil, canola
onions, raw
oat bran, raw
cheese, mozzarella, low sodium
egg substitute, powder
spices, basil, dried
spices, pepper, black
tomato sauce, canned, no salt added

Directions:
Preheat oven to 375 degrees.
Coat an 8x8-inch baking dish with non-stick cooking spray.
Squeeze zucchini between paper towels to remove excess moisture.
In a small skillet, heat oil; saute onion until tender.
Transfer to a large bowl.
Add zucchini and remaining ingredients except tomato sauce.
Mix well.
Pour into prepared baking didh.
Spread tomato sauce evenly over top.
Bake 30 minutes.
Serve hot.
