Candied Sweet Potato Casserole
Ingredients:
butter, without salt
sugars, brown
candies, marshmallows
spices, cinnamon, ground
spices, nutmeg, ground
sweet potato, raw, unprepared
Directions:
1.
Preheat oven to 400 degrees F. Grease an elongated 2-quart baking dish with cooking spray.
2.
Bring a large pot of water to a boil.
Add potatoes and boil until slightly underdone, about 12-15 minutes.
Drain and set aside.
3.
In a large saucepan over medium heat, combine butter, brown sugar, 1 1/2 cups marshmallows, cinnamon and nutmeg.
Cook, stirring occasionally, until marshmallows are melted.
4.
Stir potatoes into marshmallow sauce.
While stirring, mash a few of the potatoes, and break the others into bite-sized chunks.
Transfer to prepared dish and dot the top with remaining marshmallows.
5.
Bake in preheated oven for 15 minutes.
Remove from oven and cover top evenly with remaining marshmallows.
Return to oven and bake 10 minutes or until marshmallows are golden brown.
