Double Chocolate Protein Bars with Coconut and Pecans
Ingredients:
honey
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
beverages, protein powder whey based
cocoa, dry powder, unsweetened
oats
rice, white, long-grain, regular, unenriched, cooked without salt
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
nuts, pecans
spartan, real semi-sweet chocolate baking chips,
Directions:
In a medium size mixing bowl combine the honey and coconut oil.
Microwave for 45 seconds until the oil has melted.
Add the protein powder and cocoa powder and stir well.
Add the oats, rice, coconut, pecans, and chocolate chips until well combined.
Line an 8x8 pan with foil, allowing the foil to hang over pan edges, and spray foil with cooking oil.
Add the granola mixture to the pan and spread it evenly.
Using your spatula press the mixture down into the pan (the tighter the mixture is the less likely your bars are to fall apart).
Place bars in the freezer to set for 15-20 minutes.
Turn bars out onto a cutting board, carefully remove foil and slice into bars.
Keep cold.
