PB&J Quinoa Power Balls
Ingredients:
quinoa, uncooked
oil, corn, peanut, and olive
seeds, flaxseed
blueberries, raw
salt, table
peanut butter, smooth style, without salt
honey
vanilla extract
Directions:
In food processor, combine 1 cup quinoa flakes, peanuts and flax seeds.
Pulse until finely chopped.
Add blueberries, salt, peanut butter, honey and vanilla.
Pulse until mixture forms a dough.
Place remaining quinoa flakes in shallow dish.
Form dough into 24 balls.
Roll balls in quinoa flakes until evenly coated.
Refrigerate for 1 hour.
