Homemade Roca
Ingredients:
butter, without salt
sugars, granulated
syrups, corn, light
water, bottled, generic
spartan, real semi-sweet chocolate baking chips,
nuts, almonds
Directions:
Melt butter in a heavy-bottomed pan.
Add sugar, syrup and water.
Boil until sugar dissolves.
Continue soft boiling and stir frequently until it reaches 290 degrees.
Pour into a sprayed foil-lined pan (15x10x1) and spread to the edges.
Cool for 5 minutes.
Evenly sprinkle chocolate chips over the mixture and let set for 2 minutes.
Spread chips out with spatula.
Cover with almonds (optional) and set in the fridge for several hours to harden.
Once its completely hardened, remove from the pan and break into pieces.
