Simple Soft & Fluffy Bread Rolls

Ingredients:
wheat flours, bread, unenriched
wheat flour, white, cake, enriched
sugars, granulated
leavening agents, yeast, baker's, active dry
salt, table
butter, without salt
water, bottled, generic
milk, fluid, 1% fat, without added vitamin a and vitamin d

Directions:
Add all the ingredients except for the butter to a bowl on a scale (aim the water and milk at the yeast when adding them).
Mix in the bowl until it comes together to form a ball.
Knead, and once it's smooth add the butter and continue to knead.
Keep kneading.
Once you can see your fingers through the dough, it's good to go!
Put in a lightly greased bowl and allow to rise for 50 to 60 minutes (we have an oven with a fermentation function at 40C).
It'll expand to twice its size, like this.
Deflate the dough and separate into 8 pieces.
Allow to rest for 10 minutes.
Cover with a damp towel.
Deflate the dough and make into balls by pulling on the outside.
Here I apply strong flour to the outside, but you don't have to.
Allow the dough to rise for the second time.
It'll expand like this after the second rise.
Preheat your oven to 190C, then bake for 15 minutes at 180C.
And this is what they look like when finished.
They smell great!
