Celebratory Red and White Namasu (Marinated Daikon and Carrot Salad) for New Year's
Ingredients:
radishes, raw
carrots, raw
salt, table
sugars, granulated
vinegar, distilled
Directions:
Julienne daikon and carrot with the slicer.
Rub with salt in a bowl and squeeze out excess water without rinsing (don't squeeze too tight).
In a storage container, mix sugar and vinegar well.
Toss with the daikon and carrot until the flavor is well blended and serve.
