How To Proof Bread Dough (Rise)

Ingredients:
water, bottled, generic

Directions:
Bring a pot of water of to a boil.
Turn off the heat.
Put your bread dough in a bowl that fits completely inside a steamer.
Place the steamer on top of the pot of boiling water.
Place a piece of kitchen parchment paper on top, then the pot lid, to prevent the dough from drying out.
Then just leave the dough to rise 1 to 2 hours.
For the 2nd rising, re-heat the water and transfer it to a big frying pan.
Put the baking tray with the formed dough on top of the frying pan.
Cover with a flour-dusted piece of plastic wrap to prevent the dough from drying out.
If the water in the pot gets cold, heat it up briefly.
Remove the steamer.
