Vickys Chocolate Chip Paradise Pie
Ingredients:
cookies, graham crackers, plain or honey, lowfat
butter, without salt
sugars, granulated
spartan, real semi-sweet chocolate baking chips,
wheat flour, white, all-purpose, unenriched
sugars, granulated
leavening agents, baking powder, double-acting, sodium aluminum sulfate
milk, fluid, 1% fat, without added vitamin a and vitamin d
oil, olive, salad or cooking
vanilla extract
spartan, real semi-sweet chocolate baking chips,
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
nuts, walnuts, english
Directions:
Preheat the oven to gas 4 / 180C / 350F and grease a 6" x 8" ovenproof dish
Combine the cookie crumbs, butter and sugar for the base layer together and press into the bottom of the greased dish
Sprinkle the chocolate chips on top and bake for 5 minutes until the chocolate has melted, then spread it over the top of the base with the back of a spoon
Whisk together the flour, sugar and baking powder then beat in the milk, oil and vanilla until smooth
Fold in the coconut, chopped walnuts and chocolate chips
Pour the batter over the base and return to the oven to bake for 35 - 40 minutes or until a toothpick tests clean
Serve straight out of the oven with ice cream, chocolate sauce and caramel sauce
