1 clove garlic, rather finely chopped or mashed to a paste

⅜ cup (20 gr) finely chopped chervil, optional
⅜ cup (20 gr) finely sliced chives
4 tablespoons (60 ml) Good, contemporary-tasting olive oil
2 tablespoons white wine vinegar, optional
up to ½ cup (125 ml) dry white wine
salt and black pepper
