Peach Jam

Ingredients:
peaches, yellow, raw
sugars, granulated
lemon juice, raw

Directions:
Crush peaches with a pastry blender or run though a food processor.
They need to be a little chunky but not pureed.
Mix with sugar and lemon juice and let stand 1 hour.
In heavy saucepan over med heat, cook until thick and jellied.
Pour into pint jars and process in hot water bath for 20 min.
(or as directed according to your altitude)
Serve over toast or vanilla ice cream.
