Vegan Cornbread

Ingredients:
soymilk, original and vanilla, unfortified
vinegar, distilled
cornmeal, degermed, unenriched, yellow
wheat flour, white, all-purpose, unenriched
sugars, granulated
sugars, granulated
salt, table
leavening agents, baking powder, double-acting, sodium aluminum sulfate
leavening agents, baking soda
oil, olive, salad or cooking

Directions:
Preheat oven to 425.
Lightly oil a 9-inch square baking dish.
Combine soymilk and vinegar and let stand.
In a large bowl, mix dry ingredients.
Add soymilk mixture and oil.
Stir just until blended.
Spread the batter into pan.
Bake for 20-30 minutes, or until a toothpick inserted in the center comes out clean.
