Curried Pumpkin Seeds
Ingredients:
seeds, pumpkin and squash seeds, whole, roasted, without salt
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
spices, curry powder
salt, table
Directions:
Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
Toss the pumpkin seeds in a large bowl with the coconut oil until well coated.
Sprinkle with the curry powder and salt and toss to coat completely.
Spread the seeds in a single layer on the prepared baking sheet.
Bake, stirring halfway through and rotating the baking sheet, until golden brown, about 20 minutes.
Serve warm or at room temperature.
