Vegan Peanut Butter Bread
Ingredients:
wheat flour, white, all-purpose, unenriched
sugars, brown
leavening agents, baking powder, double-acting, sodium aluminum sulfate
salt, table
spices, cinnamon, ground
peanut butter, smooth style, without salt
soymilk, original and vanilla, unfortified
Directions:
Preheat the oven to 375 degrees F. Grease a loaf pan and set aside.
Whisk together the dry ingredients.
Place the peanut butter in a small bowl and melt it in the microwave, for approximately 30 seconds.
Add the soymilk and melted peanut butter to the dry ingredients.
Mix just until combined.
Pour into the prepared pan.
Bake for 35 to 45 minutes or until a toothpick comes out clean.
Allow the loaf to cool for 5 minutes in the pan then remove to a cooling rack.
It is easier to slice once cooled but dig in right away if necessary.
Note: The soymilk used was vanilla and not low fat.
