No Bake Chewy Cocoa Granola Bars
Ingredients:
cereals, oats, regular and quick, unenriched, cooked with water (includes boiling and microwaving), without salt
oats
shortening confectionery, coconut (hydrogenated) and or palm kernel (hydrogenated)
cocoa, dry powder, unsweetened
seeds, flaxseed
seeds, sunflower seed kernels, dried
sweetener, herbal extract powder from stevia leaf
butter, without salt
honey
vanilla extract
Directions:
In a large bowl stir together the first 7 ingredients (cereal through stevia) until well blended.
In a separate microwaveable bowl add the coconut butter, honey and vanilla.
Heat it in the microwave for 1 minute and stir completely until well incorporated.
Pour into the dry ingredients and mix well.
Line an 8x8-inch baking dish with parchment paper, leaving paper hanging over opposite sides.
Spray the parchment paper with nonstick cooking spray.
Pour the mixture into the baking dish.
Spread it to the edges and press down with a spatula to even off the top.
Refrigerate for 30 minutes.
Lift it out of the dish using the parchment paper handles and place it onto a cutting board.
Slice into squares or bars.
Wrap individually to store.
