pork, fresh, loin, tenderloin, separable lean only, raw
soy sauce made from soy (tamari)
pineapple juice, canned or bottled, unsweetened, without added ascorbic acid
sugars, granulated
vinegar, distilled
water, bottled, generic
oil, olive, salad or cooking
wheat flour, white, all-purpose, unenriched
salt, table
pineapple, raw, all varieties
cornstarch
water, bottled, generic

Directions:
1.
Cut ribs apart; then with a cleaver, chop each, bone and all, in 2-inch sections.
Add in soy sauce and toss.
Let stand 45 min, turning occasionally.
Drain, discarding sauce.
2.
Drain canned pineapple, reserving juice.
Combine juice with sugar, vinegar and water.
3.
Heat oil in a heavy pan.
Add in ribs and stir-fry to brown (3 to 4 min).
4.
Stir in flour, then pineapple juice mix.
Heat quickly, then simmer, covered, till ribs are tender (about 45 min).
5.
Add in salt and canned pineapple chunks, stirring in gently only to heat through.
6.
Meanwhile blend cornstarch and cool water to a paste, then stir in to thicken.
Serve warm.
